Thaw the roast in the refrigerator. Season with salt, pepper, or our Epicure Seasoning and olive oil. Place roast fat-side-up on a rack in a shallow roasting pan. Sear at 500°F for 15 minutes, then continue to cook at 350°F for 20-25 minutes per pound or until meat thermometer registers 135-140°F for medium rare.
